March, 2013  – Golden Zucchini Coins

 

 

There are just two steps to cooking this side dish.  If you like dipping things in marinara sauce (as I do), you’ll love these!

 

Ingredients:

6 small, thin zucchinis or yellow summer squashes (or a comination)

½ cup of grated Parmesan cheese

Salt – to taste

Pepper – optional

Spaghetti sauce – optional

 

Use a plastic knife and slice each zucchini into ¼” thick rounds. In a wide microwavable bowl, heat the zucchini slices, with ¼ cup of water, for 1-2 minutes (until just tender).  Drain in a colander and set aside.

 

Preheat the broiler. Place the zucchini in a single layer on a large baking sheet. You can line the baking sheet with aluminum foil if you want it to be easier to clean up afterwards. Sprinkle each “coin” with a pinch of salt (and pepper, optional) and some Parmesan cheese. Broil the zucchini until just golden, 1 to 2 minutes. Watch your “coins” as they broil, just to be sure they don’t burn.  Have a grown-up take the baking sheet out of the oven.  And you are now rich – with zucchini coins! 

 

If you’d like to dip them, pour spaghetti sauce into a small dipping bowl.  Enjoy!
