November, 2014 – Walk to Cure Arthritis

Walk to Cure Arthritis, Saturday, November 8 at John Prince Park

WHAT:               The Walk to Cure Arthritis is the Arthritis Foundation’s signature event that raises funds and awareness to fight arthritis, the nation’s number one cause of disability.  This event raised funds for research, health education and government advocacy efforts to improve the lives of people with arthritis.

WHEN:              At 8:45 on Saturday, November 8, media are invited to meet Arthritis Foundation spokespeople at the START line of the Walk to Cure Arthritis to conduct interviews or stage pre-event photos.

WHERE:            John Prince Park, Center Drive Pavilion, 4759 S. Congress Avenue, Lake Worth, FL

WHY:                The prevalence of arthritis or chronic joint symptoms is surging, affecting 4 million Floridians, and approximately 53 million Americans.  The Walk to Cure Arthritis raises funds and awareness to help prevent, control and cure arthritis and related diseases.

WEST PALM BEACH, Fla. – Kretzer Piano presents this concert as part of their ongoing Music for the Mind concert series to benefit music education.

UB Kinsey / Palmview Elementary School of the Arts is a public elementary magnet school serving kindergarten through fifth grade students.

This Winter Concert will feature orchestra, band, chorus and piano.  Proceeds will help the Music Department purchase supplies and equipment.

The Harriet Himmel Theater at CityPlace

I hope you are enjoying our series of new videos!  Most recently, we produced a video about the upcoming WinterFest, happening Dec. 6th at the Palm Beach International Equestrian Center.  Previous to that, we produced a video about “Paws for a Blessing” at St. Michael’s LutheranChurch in Wellington. Thank you to Monica Kallas of SharpShooter Marketing for all of her hard work and expertise on these videos!

It’s been a season of mixed emotions for our family, as we’ve recently lost my husband’s mother. But as we keep reminding the kids, Grandma Stella is looking down on us from heaven…and she is truly an angel. So despite the fun of Halloween and Thanksgiving, there is some sadness mixed in as well.  It’s important to remember, when we interact over the holidays, that the holidays are a celebration, but also a time when some of our loved ones are deeply missed.

From our Travel article which takes us to Utah to our Florida Foodie article which takes us to Café Chardonnay, we have a lot to offer this month – thanks to our Around Wellington writers!

Caramel Apple Cheesecake Crumble Bars

Everyone loves the taste of salted caramel these days it seems! Between the rich flavors of salted caramel, apples, and cinnamon to tempting layer of cream cheese and chunky oat crumbles, this will be your new favorite apple bar recipe – apple pie, apple crumble, and cheesecake all in one. The recipe begins with a brown sugar shortbread-style crust that’s tender and light. The crust is topped with a rich and creamy cheesecake layer, which is topped with cinnamon-and-sugar spiced apples. Then there’s a buttery, oatmeal and brown sugar crumble that’s sprinkled on, and after baking the bars are drizzled with salted caramel. Make sure to let the bars cool very well (overnight is best) before slicing.

YIELD: one 8×8 pan, 9 to 12 generous squares

 

PREP TIME: 25 minutes

COOK TIME: about 55 to 60 minutes, divided

TOTAL TIME: 5+ hours, or overnight, for cooling

INGREDIENTS:

Crust
1 cup all-purpose flour
1/4 cup light brown sugar, packed
1/2 cup unsalted butter (1 stick), softened

Cheesecake 
8 ounces cream cheese, softened (use brick-style, lite okay)
1 large egg
1/2 cup granulated sugar
1 teaspoon vanilla extract

Apples
about 2 cups small dices apples (from about 2 med apples, peeled and cored; I used 1 Fuji and 1 Gala)
2 tablespoon granulated sugar
1 tablespoon cinnamon
1/4 teaspoon ground nutmeg

Crumble 
1/2 cup light brown sugar, packed
1/2 cup all-purpose flour
1/2 cup old-fashioned-whole rolled oats (not quick-cook or instant)
6 tablespoons unsalted butter (3/4 of 1 stick), softened

Caramel
1/2 cup+ (salted) caramel sauce, for drizzling (homemade salted caramel, or storebought; use a thick caramel sauce and not thin, runny ice cream sundae topping)
ice cream, optional for serving

DIRECTIONS:

  1. Preheat oven to 350F. Line an 8-inch square pan with aluminum foil leaving overhang and spray with cooking spray, or grease and flour the pan; set aside.
  2. Crust – In a large bowl, add the flour, brown sugar, and cut in the butter with two forks. Keep working until mixture is combined and pea-sized crumbly bits are present.
  3. Turn mixture out into prepared pan, hard-packing it with your fingertips in an even, smooth, flat layer to form a crust. Bake for 14-15 minutes, or just until set (set a timer). Remove from oven; set aside. While crust bakes, prepare the remaining layers.
  4. Cheesecake – In a large bowl (same one used for crust is okay, just wipe with a paper towel), add all ingredients and beat with a hand mixer (or whisk vigorously by hand) until smooth and combined, about 2 minutes on high power; set aside.
  5. Apples – Peel, core, and dice apples and place in a medium bowl. Sprinkle with sugar, cinnamon, nutmeg, and toss well to combine; set aside.
  6. Crumble – In a medium bowl, add the flour, brown sugar, oats, and cut in the butter with two forks. Keep working until mixture is combined and pea-sized crumbly bits are present. If necessary, add an extra tablespoon or two of flour or oats for preferred consistency if mixture is loose.
  7. After removing pan with the crust layer from the oven, pour cheesecake mixture over the crust, smoothing the top lightly with a spatula.
  8. Lightly and evenly sprinkle the apples.
  9. Evenly sprinkle with the crumble mixture. It looks like a lot, but it sinks some while baking.
  10. Bake for 45 to 50 minutes (I baked 48 minutes), or until crumble topping is just set and very lightly golden browned. Place pan on a wire rack to cool for about 30 minutes.
  11. Caramel – After 30 minutes, evenly drizzle with (salted) caramel sauce. Allow bars to cool, in pan, on wire rack for at least 4 hours, or overnight. Cover with foil if cooling overnight. Don’t slice bars too early because you’ll have a literal hot mess and bars will likely fall apart. Prior to slicing, lift bars out using foil overhang, slice, and serve. Bars will keep airtight at room temp for up to 1 week, or in the freezer for up to 6 months. Optionally serve with ice cream.

1. Kale

Kale is a food which is packed with nutrition. Kale contains high levels of vitamin C, Vitamin A, Vitamin K1, Potassium, Calcium, Copper, Manganese, Magnesium and Vitamin B6.

Two grams of kale contains only 50 calories, two grams of fiber and three grams of protein. According to authoritynutrition.com, “Kale may be even healthier than spinach. Both are super nutritious, but kale is lower in oxalates, which are substances that can bind minerals like calcium in the intestine, preventing them from being absorbed.”

2. Avocado

Avocado’s are very healthy and consuming them regularly have good effects on the human body. They contain nutrients such as Vitamin K, Folate, Vitamin C, Potassium, Vitamin B5, Vitamin B6 and Vitamin E. On top of that many experts believe avocados can lower your cholesterol. Avacados also contain healthy fat’s that could be a great substitute for unhealthy fats like cheese.

Beans contain many healthy compounds, two of which are isoflavones and phytosterols which many experts have found are related to lower cancer rates. Beans are also known to lower cholesterol. According to Rd.com, “Studies find that about 10 grams of soluble fiber a day—the amount in 1/2 to 1 1/2 cups of navy beans—reduces LDL cholesterol by about 10 percent.” According to Besthealthmag.ca, “Beans are in fact good for your heart, thanks in large part to their soluble fibre, which soaks up cholesterol so the body can dispose of it before it can stick to artery walls.”

4. Blueberries

According to Blueberrycouncil.org, “Blueberries are packed with Vitamin C. In just one serving, you can get 14 mg of Vitamin C – almost 25 percent of your daily requirement. Vitamin C is necessary for growth and development of tissues and promotes wound healing.” Blueberries also contain high levels of dietary fiber and also Manganese, (which help the human body process cholesterol) carbohydrates and protein.

5. Lemons

Lemons are great for your liver because they act as a dissolvent of uric acid and other poisons. Lemons contain Citrus flavonoids which can help hinder cancer cell growth. According to Fitnessmagazine.com, “just one lemon has more than 100 percent of your daily intake of vitamin C, which may help increase “good” HDL cholesterol levels and strengthen bones.”

November 2014 Special Events and Promotions Announced for Palm Beach Zoo

WEST PALM BEACH, Fla. — The Palm Beach Zoo & Conservation Society is announcing the following special events and promotions for the month of November 2014:

Families Reading Together: Kick-Off at the Zoo: November 1, 10 a.m. to 4 p.m. on behalf of the Palm Beach County Library System — During Families Reading Together: Kick-Off at the Zoo, the Palm Beach County Library System Bookmobile will be parked outside the Zoo entrance distributing coupons for a free book plus free admission for a child and accompanying adult with the presentation of a valid Palm Beach County library card. Free books will be distributed in the Zoo’s Florida Pioneer House upon presentation of the book coupon. Children can also meet Dewey The Owl at the Zoo.

Green Market Stand: November 1, 12 p.m. to 5 p.m. – Take home farm-fresh Florida produce from the Zoo’s Green Market Stand. Visitors can browse a wonderful selection of fresh, locally-grown produce and other sustainably-harvested items directly outside of the Zoo’s exit gate, and learn about how buying local produce protects wildlife. The produce stand will remain open until 5 p.m. so all Zoo-goers have a chance to shop before they head home for the evening.

Veterans Day Promotion: November 8 through November 11 – The Zoo is thanking veterans for their service, and honoring them with free admission to the Zoo. The Veteran’s Day weekend promotion is offered from Saturday, November 8, 2014 through the end of the day on Tuesday, November 11, 2014, and includes the following:

  • For all active-duty, retired or reserve military personnel with appropriate military ID, free admission for themselves and 50% off admission for up to three members of their group.
  • For all active-duty, retired or reserve military dependents without serviceperson in attendance with appropriate military dependent ID, 50% off admission for up to four people in their group.

Johnson’s Holiday Pies And Cakes Now On Sale

Johnson’s Custom Cakes has started taking orders for holiday pies and cakes. Every season the shop selects several popular flavors to offer during the holidays. All pies and cakes are made to order.

This year the pie flavors will be Apple Crumb, Pecan, Pumpkin, and Sweet Potato. Pies are priced at $13.50 each. Holiday cakes will also be featured this year. The selection will consist of Apple Carmel, Pumpkin Roll, and Pumpkin. Prices vary depending on the number of servings. The bakery will be accepting orders for the next two weeks. October, 2014 – Wellington Rotary at PW Children’s Hospital

Wellington Rotary Distributes Tricks and Treats to Palm West Children’s Hospital

The Rotary Club of Wellington FL continued its “hands on” community service projects on October 31st, 2014.  Many members of the Club attended a Halloween Trick or Treat party for the patients at The Palms West Children’s Hospital.    The members of the club visited the rooms and greeted the children and parents.  Toys, candy, and other treats were distributed to the children by the members of the Club.

The children and their family members seemed to enjoy the visit and gifts given by the Rotary members.
